Black, green and white peppers come from the same plant. Black pepper is harvested before it is ripe, fermented and then dried, which gives it its black colour. Green pepper is also harvested before it is ripe, but is then preserved as a fresh fruit with salt and vinegar. Finally, the white peppercorn is separated from its skin and then dehydrated.
